Mushroom & Ginger Glaze
A sweet, savory, and tangy glaze that's perfect with shiitake mushrooms, but equally delicious with mixed mushrooms, oyster mushrooms, or pioppino.
Ingredients
- ½ lb. sliced mushrooms (shiitake, mixed mushrooms, oyster, or pioppino)
- 1 tbsp. oil (for sautéing)
For the glaze
- ¼–⅓ cup olive oil or sesame oil
- ¼–⅓ cup rice vinegar or apple cider vinegar
- ¼–⅓ cup honey
- ¼–⅓ cup soy sauce
- 2–3 inch piece fresh ginger, finely diced or grated
- 2–3 garlic cloves, crushed
- 1 tbsp. chili flakes (optional)
- Freshly ground black pepper, to taste
Vegetables
- 1 red or yellow bell pepper, sliced
- 1 large onion, diced
Instructions

Sauté the vegetables.
- Heat 1 tablespoon oil in a large skillet over medium heat.
- Add the mushrooms, bell pepper, and onion.
- Cook, stirring occasionally, until the onions begin to caramelize and the mushrooms are lightly browned.

Prepare the glaze.
- In a small bowl, whisk together the olive or sesame oil, vinegar, honey, and soy sauce.
- Start with ¼ cup of each liquid ingredient and adjust to taste.
- Stir in the ginger, garlic, chili flakes (if using), and black pepper.

Finish the dish.
- Pour the glaze over the mushroom mixture.
- Simmer for 10–15 minutes, stirring occasionally, until the sauce thickens into a glossy glaze.

This versatile glaze is delicious:
- Brushed over baked or grilled chicken
- Served with salmon or other fish
- Tossed with tempeh or tofu
- Spooned over steamed rice with vegetables
- Mixed into rice noodles or stir-fries
